Originally from Nagoya, Japan, Kajiken is a chain mazesoba shop that specializes in Abuja Soba, or soupless ramen,   Rockville is Kajiken’s second US location, after opening in Baltimore.  Kajiken serves the restaurant’s signature dish of fresh ramen noodles coated in housemade soy sauce, chili oil and vinegar imported from Japan, with toppings like chashu, egg yolk and bamboo shoots.  The menu also includes traditional ramen, donburi and appetizers like edamame, gyoza and karaage. Kajiken is open daily from 11:00 - 3:00 p.m. and 5:00 - 10:00 p.m. For more information, visit their website here.
